Gluten Free Brownies

So, I bought gluten free flour a few weeks ago thinking i would try making bread with it. Well i tried it, and it was nasty! It tasted like cardboard.

Well, I have yet to experiement more with GF bread, but i tried GF brownies. VERY GOOD! I made dark chocolate ones, but here is the recipe i got offline:

Clare's Gluten-Free Brownies

This is the original brownie recipe from Clare, featuring cocoa powder.

3/4 cup gluten free flour (almond and sweet rice flour combo)
1 cup sugar (brown or white)
5 tablespoons cocoa
1 teaspoon salt
1/2 cup shortening (butter, or GF margarine etc.), softened
2 eggs

To make it easy, Clare melts the shortening in a glass bowl using a microwave, then adds the rest of the ingredients.

Add 1/2 cup of nuts, etc., if desired.

Spread in an 8x8-inch baking pan.

Bake at 350 degrees F for 30 minutes. Cool. Cut. Wrap and freeze.

*Note:

To make these brownies minty, add 2 teaspoons peppermint extract to the batter.
